Chef Jay specializes in Japanese Kappou cuisine, a craft he has dedicated his life to perfecting. His passion for Japanese food began at a young age and flourished during eight years of rigorous training at prestigious fine dining establishments in Tokyo. Later, he settled in Perth, Western Australia, where he continued to refine his skills and pursue his passion for cooking, offering guests an unforgettable dining experience that transcends the boundaries of traditional Japanese cuisine.
