Welcome to Gyouten (行天)
Gyouten (行天) reflects a philosophy of dedication and excellence. “Gyō” represents Chef Jay’s commitment to precision, discipline, and mastery, while “Ten,” meaning sky, symbolises elegance, aspiration, and reverence for the finest ingredients. Together, Gyouten embodies the pursuit of perfection in harmony with nature, guided by seasonality and the ingredients of the day.

We focus on seasonal produce at its peak, allowing purity of flavour and texture to take centre stage. Each dish is crafted with precision to offer a refined and memorable dining experience.
Chef Jay specialises in Japanese Kappo Omakase. Trained for eight years in Tokyo’s fine dining kitchens, he now brings his craft to Perth, creating an intimate omakase experience rooted in tradition and elevated by artistry.
